Our Philosophy
The Refectory Café at Duke Law School is dedicated to providing healthy, homemade, nutritious meals while preserving the environment, strengthening our community, and enriching the lives of our employees.
As a company, the Café:
- Provides “green collar” jobs with benefits and living wages for employees
- Uses locally farmed, “sustainable” eggs and meats
- Uses whole, unprocessed or minimally processed foods that are made fresh on-site
- Buys as much local product as possible and has relationships with 33 local suppliers and farmers
- Creates nutrient-rich menu items that include lots of fruits, vegetables, proteins, and nuts
- Uses as much “sustainably produced” product as possible
- Features seasonal fruits and vegetables daily
- Is “environmentally conscious,” recycling as much as possible, using Styrofoam-free and BVC products, and reducing oil and gas consumption by buying locally
